Patient of the Week – Lynsday! For over 5 years, Lyndsay suffered from IBS manifesting as constant stomach pain, food sensitivities, and headaches. Here is a recipe for Strawberry Sorbet from our friend, Andrea Beaman. It is simple and delicious. Strawberries are packed with vitamin C (you get 160% of your daily requirements from just one cup) folic acid, potassium, and fiber. The organic grape juice concentrate adds the sweetness and the mint makes it over the top. •4 cups frozen strawberries •1/3 cup. organic grape juice concentrate •Fresh mint leaves Remove frozen strawberries from freezer and thaw 5-10 minutes. Put strawberries and grape juice concentrate into a food processor or powerful blender and puree until smooth and creamy. Adjust sweeting by adding more grape juice concentrate if needed. Serve immediately or refreeze for more solid consistency. Garnish with fresh mint leaves.

Palm Springs is known for many things, one thing they are known for are their “date shakes” and date ice cream. They use vanilla ice cream and dates as the main ingredients for the shakes. Medjool dates are the sweetest variety (and are the one ones that can be picked and eaten fresh) and as all dates, have been a staple food of the Middle East for thousands of years. They have been cultivated since ancient times possibly as early as 4000 BC! The Ancient Egyptians used them to make wine as well. These wrinkled unfortunate looking fruits are considered a “drupe” because they possess a stone in the center. Dates are high in fiber (for colon health) iron (for blood health) , and contain B vitamins (for a healthy nervous system), potassium (for your heart), Vitamins A (for your eyes) and K (aid in proper clotting of blood) , magnesium (needed for more than 300 biochemical reactions in the body), and manganese (important for skin integrity and blood sugar control) Here is a healthy recipe for a date shake not using vanilla ice cream. This version is healthy AND delicious and can be enjoyed when you want something sweet. TOTALLY DECADENT SUMMER SHAKE • 1/2 cup unsweetened almond or other milk of choice • 4 pitted dates • 1 banana, frozen • 1/8 teaspoon cinnamon • 1/ 2 cup ice cubes • ½ teaspoon vanilla extract A sprinkling of fresh nutmeg Blend everything together in high speed blender until smooth and creamy. You can “soak” the dates in the milk for 30 minutes to make them a bit softer.

WholeBody Solutions’ Patient of the Week! Colcannon Mash Colcannon is a traditional Irish dish made of potatoes, Kale or cabbage (kale when in season) and spring onions, along with a lot of Irish butter! It is traditionally served with bacon or corned beef, but you can serve it with anything you desire. It is really delicious and good for you as well. (The Irish even have a song about it) Traditionally, on Halloween, they used to hide coins or thimbles in the dish. 1 1/2 pounds organic potatoes, scrubbed well. 5 tablespoons (or more) or KerryGold Irish Butter 3/4 – 1 cup of hot milk of choice, or half and half About half a head of finely shredded cabbage, or kale 4 scallions or so Sea salt and pepper Fresh parsley Steam the potatoes in their skins for about 30 minutes. Peel them using a knife and fork. Mash thoroughly with masher. Add butter, sea salt, pepper, and hot milk, mashing more until lumps are few and far between. While the potatoes were cooking, this is the time to cook the cabbage or kale in a little water with salt and butter until just cooked. DO NOT OVERCOOK. Drain well. Toss in with the potatoes, add a bit more butter and the chopped scallions. Check for seasonings and sprinkle with parsley. Serve with some fish, chicken , lamb, corned beef, whatever you prefer. Remember the Irish song? Well part of it was about the extra butter swimming on the potatoes, so you better add in some extra on the top before serving. ENJOY!

I recommend if you are not soaking your dried beans to purchase Eden brand canned beans since they are easy to digest, organic, and do not contain a BPA liner. – 2 cans of navy beans, drained – 5 cups of organic broth of choice – 2 bay leaves – 1 tsp. sea salt – 2 pieces naturally cured pastured bacon – 1 leek, peeled and diced – 2 new or red potatoes, diced – 3 celery stalk, diced – 2 carrots, diced – 1/4 tsp. dried rosemary – 1/4 tsp. dried thyme – 1 tsp. Sea salt or to taste – Black pepper (to taste) Bring beans to a boil in broth and skim off any foam that rises. Add bay leaves, cover and lower heat to simmer. Fry the bacon and chop into small pieces. In the bacon fat, saute the leeks, celery and carrots. Add vegetables to the soup. Add 1 tsp. sea salt and potatoes and continue cooking 25-30 minutes. Season with sea salt and black pepper to taste if needed.

LENTIL CHILI Here is a lighter version of traditional chili that will keep for a few days in the refrigerator. Nice to come home after a hard days work, heat it up, and top with some diced avocado and Greek Yogurt for a complete meal! 2 Tbsp. olive oil 1 medium onion, chopped 1 large red bell pepper, chopped 1 zucchini, chopped 5 cloves garlic, minced 1 tablespoon chili powder 2 teaspoons cumin 1 (16 oz.) bag of brown lentils RINSED well 2 (14.5 oz.) cans diced tomatoes 1 bay leaf 2 (32 oz.) cartons organic vegetable stock or chicken stock ⅓ cup fresh chopped cilantro sea salt and fresh ground black pepper Instructions 1. In a large soup pot, heat olive oil over medium heat. Add onion, zucchini and red bell pepper; saute the vegetables for 8 minutes or until onion is soft and lightly browned. 2. 2 (32 oz.) cartons organic vegetable stock or chicken stock
⅓ cup fresh chopped cilantro
sea salt and fresh ground black pepper
Instructions
1. In a large soup pot, heat olive oil over medium heat. Add onion, zucchini and red bell pepper; saute the vegetables for 8 minutes or until onion is soft and lightly browned.
2. Stir in garlic, cumin and chili powder; cook for 1 minute.
3. Add lentils, tomatoes, bay leaf and stock. Bring to a boil, lower the heat to medium-low and simmer partially covered for 30 minutes or until lentils are tender. Remove from the heat and discard the bay leaf.
4. Stir in cilantro and serve.
