Pumpkin Chili Recipe
-1lb of ground beef/turkey/chicken -1 onion chopped -4 garlic cloves minced -1 15-16 oz can of tomato sauce -1 can pumpkin (not seasoned sweetened pumpkin, just plain pumpkin) -1 1/2 cups broth -1 red pepper, chopped -1 zucchini, chopped -1-2 tablespoons chili powder -2 teaspoons cumin -1/2 teaspoon cinnamon -2-3 teaspoons herbamare (a unique seasoned salt) or just plain sea salt
-green onions, avocado, Greek yogurt for top
Sauté onions in soup pot until fragrant. Add zucchini and peppers then garlic. Cool about 5 minutes or so until sizzling and flavors are mingling. Now add the meat and cool until done. Add seasonings, including salt and combine well. Cool a bit more, then add pumpkin, broth, and both cans of tomatoes. Stir well and bring to a boil. Reduce heat, cover and summer for about 30-45 minutes. Serve with green onions, avocado and Greek yogurt spooned on top if desired! Enjoy!
