How about some red, white, and blue potato salad? Blue/purple hued potatoes look quite “exotic” for sure, but taste pretty much like regular potatoes. These colorful potatoes pack a big nutritional punch by providing carotenoids, and antioxidants like “anthocyanin” that is also found in berries and pomegranets. This potato is also very resistant to disease and are also able to withstand harsh conditions. Here is a delicious and simple potato salad recipe that will sure to be the hit of the July 4th party that you bring it to! ENJOY! 2 pounds baby potatoes, a mix of white and blue (or purple) 1/4 cup lemon juice 4 tablespoons extra-virgin olive oil 1/2-1 tsp Sea salt (I love Redmonds Real Salt) Freshly ground pepper to taste 3/4 cup chopped roasted red peppers, rinsed 5 scallions, thinly sliced 1 large clove of garlic, minced 1/4 cup chopped fresh parsley 1.Place potatoes in a large saucepan or Dutch oven and cover with salted water. Bring to a boil and cook until tender, about 15 minutes. Drain and rinse with cold water. Transfer to a cutting board. Let cool for 20 minutes. 2.Whisk lemon juice, oil, salt and pepper and garlic in a large bowl. Cut the potatoes in half, add to the bowl and toss to coat. 3.Just before serving, add peppers, scallions and parsley to the salad and toss gently.

Studies have proven that whether it is fast food or ironically, full service restaurants, people who eat out frequently consume more calories and fewer nutrients. Conversely people who prepare most of their own meals at home eat better and eat less, even when they do eat out. “Cooking” doesn’t have to be crazy. It can be a bag of organic greens, with a can of beans, with olive oil and lemon, Ground organic meats with vegetables served in lettuce cups with some organic salsa and cheese, or a piece of grilled salmon tossed with some vegetables and a quick baked sweet potato. If you aren’t the best chef around, condiments really help. Jarred pesto (make sure you choose one made with olive oil and not soy or other sub par oils) sriracha, tobasco, mustards, organic aminos (I love coconut aminos) fresh herbs and butter, all of these things help foods to taste more interesting.

CH CH CH CHIA!!! In a serving of chia seeds (about 2 tablespoons), you get about 12 grams of carbohydrates, 11 grams of fiber (which helps keep blood sugar at an even keel) , 9 grams of healthy fat, and 4.5 grams protein. They also contain all nine amino acids in proper ratios and are a great alternative for vegetarians, since they are considered a complete protein. A serving contains 18 percent of the RDA for calcium (for healthy bones), 27% RDA for phosphorus (also important for bones, teeth as well as cellular structure) 30 % for manganese (also important for proper bone formation as well as skin integrity), as well as zinc (important for immune function and hormone balance) and copper (necessary for healthy skin, hair, and helps with the formation of hemoglobin). They are rich in omega 3 fatty acids which are needed for various important functions, including but not limited to warding off cancers and arthritis, heart disease, and are imperative for brain health and even mood stabilization. Here are 40 ways that you can incorporate these little nutrition stars into your lifestyle. http://www.chiaseedrecipes.com/40-ways-to-use-chia-seeds.php
